I've been in the same exact position. Only my professor didn't ask for names and phone numbers. I made the whole thing up and ended up fairing pretty well.
That's a little strange. Do they really expect a professor who has 100s of papers to grade to call and confirm that the student interviewed everyone? I mean... that sounds like a huge waste of time. =/ Unless it's for some journalism class where it's understandable for someone to fact check.
I'd go with the use friends and tell them to expect calls.... and tell them pretty much what you want them to say. Works like a charm.
